Winemaking in Andalcia dates back over 3,000 years to around 1100 BC, when Phoenicians introduced vines to an area near Cádiz.
Today, sherry from the "Sherry Triangle", is a fortified wine ranging from bone-dry Fino and Manzanilla, with crisp, saline notes, to nutty Amontillado and Oloroso, and sweet, syrupy Pedro Ximénez and Moscatel, crafted via the solera system and albariza soils.
Ronda, in Málaga’s high-altitude Serranía, produces elegant dry reds (Tempranillo, Syrah) with blackberry and spice, and crisp whites with floral-citrus vibrancy, blending native and international grapes.
Granada’s high-altitude DOP, spread across the Sierra Nevada, crafts structured dry reds (Tempranillo, Garnacha) with dark fruit and herbs, as well as aromatic whites.
