The tradition of olive oil in Spain dates back more than 2,000 years, and the olive forms an essential part of the ‘Mediterranean-Trilogy,’ alongside grains and grapes.
Bread, olive oil and wine have always been the pillars of the Mediterranean diet and still remain so today. A visit to Spain is not complete without tasting and experiencing the best examples of these three basic products. The province of Andalusia is home to almost 200 million olive trees, well over half of Spain’s total.
A particularly intense and flavourful olive variety is Hojiblanca, with great complexity with a variety of nuances, high persistence and great harmony both in the nose and mouth. When harvested early with predominantly green olives, it has notes of grass, leaf, tomato and green almonds and other fruits such as apple, artichoke, banana peel and citrus. In the mouth it presents slightly sweet of entrance and a progressive itch and persistent but very balanced.
