Our Jerez wine tour visits one of the older classic sherry cellars as well as a visit and tasting at a strikingly modern red wine cellar surrounded by hectares of vineyards, and producing the best dry red, white and rose wines of the region.
Albariza is a snow-white, chalky soil packed with calcium carbonate and fossilized diatoms. Its sponge-like structure stores winter rainfall, then locks in moisture beneath a summer crust, giving vines steady hydration through months of drought. The bright surface reflects light and heat, keeping roots cool and fruit fresh.

The living
Solera.
In Jerez, the Solera is a living, fractional-blending "pyramid" of rows of casks called criaderas stacked upward, with the oldest wine at the bottom (the solera itself), and progressively younger wines above. When sherry is drawn for bottling, only a portion is taken from the solera; that space is refilled from the first criadera, which in turn is topped from the second, cascading downward so fresh wine enters only at the top.
This constant, gentle mixing marries many vintages into a single, consistent style while gradual oxygen contact—through the cask’s ullage—nurtures either the delicate flor of fino or the oxidative richness of oloroso. The result is a wine whose average age far exceeds any single vintage, carrying layered aromas and depth that the Solera perpetually renews.
